The Giving Trees Winter Update

From the bottoms and tops of our brimming heats, Sage and I want to Thank You for helping us take root and grow over the last 6 months.  Sometimes it shocks us to remember that The Giving Trees project was only an idea less than a year ago.  We have learned so much as we grow together and with our community.  Now we are settling in for our first Giving Trees winter.  Leaves have fallen to protect the soil from the cold and a blanket of snow dotted with footprints covers everything.  Like animals in our winter homes, we can rest a bit, assess what we learned, dream, and celebrate what we are doing together.

The Giving Trees planted 40 Blight Resistant Chestnut and Pawpaw Trees in Fall,
and we have over 100 more saplings ordered for Spring planting right here in the Hudson Valley.

We made delicious foods from the forest and shared them with over 200 people, including more than
80 lbs of acorn and chestnut flours.

Mark and Sage taught about tree based foods & met so many cool people from the community at
7 public events in summer & fall.  Our acorn processing station was always a huge hit with kids and adults alike.

Most importantly, we felt a huge wave of community support that is carrying us forward to protect the forests, grow them healthier, and continue to build our connections to nature through the saplings we plant, the lessons we learn, and the meals we share together.

 

Here is a brief list of highlights from July - December... there are so many we cannot list them all.

We are looking forward to the rest of winter -  cooking scrumptious foods and experimenting with incredible ingredients.  Each day brings us a little closer to spring - when we will  plant over 100 trees together, spreading our branches and leaves, soaking up the summer sunlight, to grow, and grow and grow so we can provide fall's bountiful harvests.
